What is Curcumin?
Curcumin is a natural phenolic antioxidant extracted from the rhizomes of some plants in the ginger family and araceae. Its main chain is unsaturated aliphatic and aromatic groups. It belongs to the diketone compound and is a commonly used seasoning and food coloring. It is non-toxic and has a chemical formula of C21H20O6. Curcumin is an orange-yellow crystalline powder with a slightly bitter taste. It is insoluble in water but soluble in organic solvents such as ethanol.
Curcumin has a variety of biological activities and health functions.
